Chocolate Cravings

The last few days I’ve found myself dipping into the girls’ leftover Halloween candy.  I’m usually a salty snacker, give me a bag of chips any day over some sugary sweet dessert.  But when I need a chocolate fix that’s still relatively healthy, I’ve been turning to these fast easy cupcakes.

They are the YUMMIEST cupcakes!  I got the original recipe from Bethenny Frankel’s blog.  She has lots of fast, easy and healthy recipes that taste so great you won’t miss the sugar, fat, dairy, etc.

You can tell this is a favorite recipe by the stains on the paper. :-)

Sift dry ingredients then combine wet ingredients

Whip wet & dry together

Mix in chocolate chips & spoon batter into cupcake pan

Bake at 350 for 25-35 minutes

Bethenny’s directions say 35-45 minutes, but mine were done in under 25 minutes (could be high altitude cooking?)

dust with powdered sugar

Sometimes I put whip cream or Cool Whip on top right before serving.

Yummmmmm!

The next day (if you have any left) pop one in the microwave for 15 seconds to get the inside nice & gooey.
